Happy Mardi Gras!

Happy Fat Tuesday everyone! Unfortunately, there aren’t a lot of Mardi Gras celebrations going on in Raleigh, NC (or really anywhere in North Carolina), so I don’t have much reason to make a King Cake this year. But, maybe you do, so I wanted to share a few recipes that I have used and/or enjoyed, from very easy to very fancy.

Easiest:

Fruit-Covered Cookie King Cake

Ingredients:

  • Packaged sugar cookie dough
  • Packaged cream cheese, softened
  • Kiwi slices
  • Pineapple slices
  • Purple grapes

Directions:

Grease and flour a round cake pan (a spring-form is easiest if you have it); press the cookie dough into it. Bake the cookie until has risen and is golden on top. Let it cool and remove from the pan. Spread the cream cheese on top. Arrange the fruit on top of the cream cheese so that the cream cheese is mostly covered. Serve chilled.

This last one is a favorite for many who want not only a traditional style, but an impressive and delicious dessert. But, you definitely have to have some extra time on your hands, which most of us don’t on a Tuesday. For me, I’ll stick with the cookie dough! Eat up!
